Lebanese-Style Garlicky Fava Beans with Tahini & Olive Oil
Ingredients (2–3 servings):
-
2 cups fresh or frozen fava beans (shelled)
-
2–3 garlic cloves, minced
-
2 tbsp olive oil (plus extra for drizzling)
-
2 tbsp tahini
-
Juice of ½ lemon (adjust to taste)
-
Salt and pepper to taste
-
Optional toppings: chopped parsley, chili flakes, pomegranate seeds
Instructions:
-
Blanch beans: Boil fava beans in salted water for 2–3 minutes until tender but still bright green. Drain.
-
Sauté garlic: In a skillet, heat 2 tbsp olive oil over medium heat. Add minced garlic and sauté 30–60 seconds until fragrant.
-
Cook beans: Add fava beans and sauté 3–4 minutes until lightly golden. Season with salt and pepper.
-
Make tahini drizzle: In a small bowl, mix tahini with lemon juice and a little warm water (1–2 tsp) until smooth and pourable.
-
Combine: Drizzle the tahini sauce over the sautéed beans and toss gently to coat.
-
Serve: Transfer to a plate, drizzle extra olive oil on top, sprinkle parsley, chili flakes, or pomegranate seeds for a pop of flavor and color. Serve warm with fresh pita bread.
Tips:
-
Tahini adds creaminess, olive oil adds richness, and lemon gives brightness—classic Lebanese balance.
-
You can serve as a meze dish alongside hummus, tabbouleh, or pickles.
