Lebanese-Style Garlicky Fava Beans with Tahini & Olive Oil

Ingredients (2–3 servings):

  • 2 cups fresh or frozen fava beans (shelled)

  • 2–3 garlic cloves, minced

  • 2 tbsp olive oil (plus extra for drizzling)

  • 2 tbsp tahini

  • Juice of ½ lemon (adjust to taste)

  • Salt and pepper to taste

  • Optional toppings: chopped parsley, chili flakes, pomegranate seeds


Instructions:

  1. Blanch beans: Boil fava beans in salted water for 2–3 minutes until tender but still bright green. Drain.

  2. Sauté garlic: In a skillet, heat 2 tbsp olive oil over medium heat. Add minced garlic and sauté 30–60 seconds until fragrant.

  3. Cook beans: Add fava beans and sauté 3–4 minutes until lightly golden. Season with salt and pepper.

  4. Make tahini drizzle: In a small bowl, mix tahini with lemon juice and a little warm water (1–2 tsp) until smooth and pourable.

  5. Combine: Drizzle the tahini sauce over the sautéed beans and toss gently to coat.
