1 cup packed brown sugar (light or dark)

¼ cup light corn syrup (or honey or golden syrup)

½ tsp baking soda

1 tsp vanilla extract

1–1½ tsp sea salt (adjust to taste)
Instructions

Pop the popcorn

Heat the oil in a large pot over medium heat.

Add the kernels and cover with a lid slightly ajar.

Shake occasionally until popping slows to about 2 seconds between pops.

Remove from heat and pour into a large bowl. Discard unpopped kernels.
