Ingredients

For the popcorn:

  • ½ cup popcorn kernels (or about 12 cups popped)

  • 1–2 tbsp vegetable oil (for popping)

For the caramel sauce:

  • ½ cup (1 stick / 115 g) unsalted butter

  • 1 cup packed brown sugar (light or dark)

  • ¼ cup light corn syrup (or honey or golden syrup)

  • ½ tsp baking soda

  • 1 tsp vanilla extract

  • 1–1½ tsp sea salt (adjust to taste)


Instructions

  1. Pop the popcorn

    • Heat the oil in a large pot over medium heat.

    • Add the kernels and cover with a lid slightly ajar.

    • Shake occasionally until popping slows to about 2 seconds between pops.

    • Remove from heat and pour into a large bowl. Discard unpopped kernels.

  2. Make the caramel

    • In a saucepan, melt butter over medium heat.

    • Stir in brown sugar and corn syrup.

    • Bring to a gentle boil and cook for 4–5 minutes, stirring constantly.

    • Remove from heat and stir in baking soda, vanilla, and salt. The mixture will bubble and lighten in color.

  3. Coat the popcorn

    • Immediately pour the caramel over the popped corn.

    • Stir or toss gently with a spatula until all popcorn is coated.

  4. Bake for crispiness (optional but recommended)

    • Preheat oven to 120°C / 250°F.

    • Spread coated popcorn on a baking sheet lined with parchment paper.

    • Bake for 45–60 minutes, stirring every 15 minutes.

    • Remove and let cool completely — it will become wonderfully crisp.
