 Here’s a simple homemade pickles recipe — crunchy, tangy, and ready fast! 🥒✨

You can use cucumbers or other veggies (like carrots, onions, or cauliflower).


🥒 Quick Pickles (No Canning Needed)

Ingredients (for 1 medium jar)

  • 2–3 small cucumbers (or 1 large, sliced)

  • ½ cup white vinegar (or apple cider vinegar)

  • ½ cup water

  • 1 tbsp sugar

  • 1½ tsp salt

  • 1 garlic clove, sliced (optional)

  • ½ tsp black peppercorns

  • ½ tsp mustard seeds (optional)

  • Fresh dill (optional)

  • A pinch of chili flakes (optional for spice)


Instructions

  1. Prepare the cucumbers

    • Wash and slice (rounds, spears, or halves).

    • Pack tightly into a clean glass jar with garlic, dill, and spices.

  2. Make the brine

    • In a small pot, combine vinegar, water, sugar, and salt.

    • Bring just to a simmer — stir until sugar and salt dissolve.

    • Remove from heat and let cool slightly (about 5 minutes).

  3. Pour and seal

    • Pour the warm brine over the cucumbers in the jar.

    • Make sure they’re fully submerged.

    • Seal the jar and let it cool to room temperature.

  4. Refrigerate

    • Chill at least 2 hours, ideally 24 hours for full flavor.

    • Keeps in the fridge up to 3 weeks.


💡 Variations

  • Sweet pickles: Add 2–3 tbsp sugar.

  • Spicy pickles: Add sliced jalapeño or more chili flakes.

  • Mediterranean style: Add bay leaf, coriander seeds, and a bit of olive oil on top.
