🦐 Prawn Tostadas Recipe

Ingredients (serves 4)

For the prawns:

  • 400 g (about 1 lb) prawns, peeled and deveined

  • 1 tbsp olive oil

  • 1 garlic clove, minced

  • ½ tsp smoked paprika (or chili powder)

  • ½ tsp cumin

  • Salt and pepper, to taste

  • Juice of ½ lime

For the toppings:

  • 1 avocado, sliced or mashed

  • ½ small red onion, finely diced

  • 1 small tomato, diced (or a handful of cherry tomatoes, chopped)

  • Fresh cilantro (optional)

  • 1 small chili or jalapeño, finely chopped (optional for heat)

  • Lime wedges, for serving

For the tostadas:

  • 4 corn tortillas (or small flour tortillas)

  • Oil for frying or brushing


Instructions

  1. Make the tostadas

    • Heat a bit of oil in a pan over medium heat.

    • Fry each tortilla for 30–45 seconds per side, until crisp and golden.

    • Drain on paper towels.
      (Or bake: brush with oil and bake at 200°C / 400°F for 5–7 minutes per side.)

  2. Cook the prawns

    • In a skillet, heat olive oil over medium heat.

    • Add garlic and cook 30 seconds until fragrant.

    • Add prawns, paprika, cumin, salt, and pepper.

    • Cook 2–3 minutes per side, until pink and cooked through.

    • Squeeze lime juice over them.

  3. Assemble

    • Spread avocado on each crispy tostada.

    • Top with diced onion, tomato, and prawns.

    • Garnish with cilantro, chili, and a squeeze of lime.


🌶️ Optional extras

  • Add a drizzle of chipotle mayo or sour cream.

  • Sprinkle with crumbled feta or cotija cheese.

  • Add shredded lettuce or cabbage for crunch.
