Here’s a simple, speedy Quick Soup recipe that’s warm and comforting:
Quick Vegetable Soup
Ingredients:

1 tbsp olive oil

1 small onion, chopped

2 cloves garlic, minced

2 cups mixed vegetables (carrots, celery, zucchini, peas, corn—fresh or frozen)

4 cups vegetable or chicken broth

1 can (14 oz) diced tomatoes (optional)

Salt and pepper to taste

1 tsp dried herbs (thyme, oregano, or mixed herbs)

Fresh parsley or basil for garnish (optional)
Instructions:

Sauté aromatics:
Heat olive oil in a pot over medium heat. Add onion and garlic, cook until softened (3-4 minutes). -
Add veggies:
Add mixed vegetables and cook for 2 minutes, stirring. -
Add broth and tomatoes:
