Here’s a simple, speedy Quick Soup recipe that’s warm and comforting:


Quick Vegetable Soup

Ingredients:

  • 1 tbsp olive oil

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 2 cups mixed vegetables (carrots, celery, zucchini, peas, corn—fresh or frozen)

  • 4 cups vegetable or chicken broth

  • 1 can (14 oz) diced tomatoes (optional)

  • Salt and pepper to taste

  • 1 tsp dried herbs (thyme, oregano, or mixed herbs)

  • Fresh parsley or basil for garnish (optional)


Instructions:

  1. Sauté aromatics:
    Heat olive oil in a pot over medium heat. Add onion and garlic, cook until softened (3-4 minutes).

  2. Add veggies:
    Add mixed vegetables and cook for 2 minutes, stirring.

  3. Add broth and tomatoes:
    Pour in broth and diced tomatoes (if using). Stir in dried herbs, salt, and pepper.

  4. Simmer:
    Bring to a boil, then reduce heat and simmer for 10 minutes until veggies are tender.

  5. Serve:
    Garnish with fresh herbs if you like.
