Prepare the spicy mayo: In a small bowl, mix together the mayonnaise, sriracha sauce, and Dijon mustard. Taste and adjust the spice level by adding more sriracha if you prefer it spicier. Add a pinch of salt and pepper for extra flavor.

Toast the buns (optional): If you like a little crunch on the outside of your sandwich, lightly toast the sandwich rolls or brioche buns in a toaster or on a skillet for 2-3 minutes until golden brown.
