Apricot Chicken (Baked or Skillet)

Ingredients:

  • 4 boneless, skinless chicken thighs or breasts

  • 1 tbsp olive oil

  • Salt & pepper, to taste

  • 1 cup apricot preserves or jam

  • 2 tbsp soy sauce

  • 1 tbsp Dijon mustard (optional, for depth)

  • 2 tsp garlic (minced)

  • 1 tsp grated fresh ginger (optional)

  • 1 tbsp apple cider vinegar or lemon juice (for brightness)

  • Chili flakes (optional, for a hint of heat)

  • Fresh thyme or parsley (for garnish)


Instructions:

1. Prepare the Chicken:

  • Pat chicken dry and season with salt and pepper.

  • Preheat oven to 375°F (190°C) if baking.

2. Make the Apricot Sauce:

  • In a bowl, mix together apricot preserves, soy sauce, mustard, garlic, ginger, and vinegar. Add chili flakes if using.

3. Cook the Chicken:

Option 1 – Baked:

  1. Heat olive oil in an oven-safe skillet over medium heat.

  2. Sear chicken 2–3 minutes per side until golden.

  3. Pour apricot sauce over the chicken.

  4. Transfer to the oven and bake uncovered for 25–30 minutes, or until chicken reaches 165°F (75°C) and sauce thickens slightly.

Option 2 – Stovetop Only:

  1. Sear chicken as above, then reduce heat to medium-low.

  2. Pour in the sauce, cover, and simmer for 20–25 minutes, flipping once, until chicken is cooked through and sauce has thickened.

4. Serve:

  • Garnish with chopped parsley or fresh thyme.

  • Serve with rice, couscous, or roasted vegetables to soak up the sauce.
