Spaghetti with Corn 🌽🍝
A simple, creamy-sweet pasta that works surprisingly well.
Ingredients — 2 servings
- 200 g spaghetti
- 1 cup corn kernels, drained
- 2 tbsp olive oil or butter
- 1 garlic clove, minced
- ½ cup cooking cream
- ¼ cup grated Parmesan
- Salt & black pepper
- Pinch of chili flakes
- 2–3 tbsp pasta water
- Optional: parsley, basil, lemon zest
Method
- Cook spaghetti in well-salted water until al dente. Reserve some pasta water.
- Sauté garlic in olive oil or butter for about 30 seconds.
- Add corn and cook 2–3 minutes until slightly caramelized.
- Add cream, Parmesan, pepper and chili flakes. Stir gently.
- Add the spaghetti and a splash of pasta water. Toss until glossy and creamy.
- Finish with Parmesan, black pepper and a little lemon zest.
Best upgrade: Blend ½ cup of the corn with a little pasta water and add it to the sauce. You get a naturally sweet, velvety corn sauce without needing much cream.
