🌈 Rainbow Cake
A cheerful six-layer rainbow cake with vanilla cake, vanilla buttercream, and bright colors.
Ingredients
Cake
- 250 g unsalted butter, softened
- 250 g sugar
- 4 large eggs
- 1 tsp vanilla
- 250 g flour
- 2 tsp baking powder
- 120 ml milk
- Pinch of salt
- Gel food coloring: red, orange, yellow, green, blue, purple
Buttercream
- 250 g unsalted butter, softened
- 500 g powdered sugar
- 2–3 tbsp milk or cream
- 1 tsp vanilla
- Pinch of salt
Method
- Heat oven to 175°C. Grease and line six 18–20 cm cake pans. If you don't have six pans, bake the layers in batches.
- Beat butter and sugar until very light and fluffy, about 3–5 minutes.
- Beat in the eggs one at a time, then add vanilla.
- Whisk flour, baking powder and salt separately.
- Add the dry ingredients to the butter mixture alternately with the milk. Mix just until combined.
- Divide the batter equally into six bowls.
- Tint each bowl a different color. Use gel coloring for intense colors without adding too much liquid.
- Bake each layer for approximately 12–16 minutes, until a toothpick comes out clean. Cool completely.
- For the buttercream, beat the butter until pale and fluffy. Gradually add powdered sugar, then vanilla, salt and enough milk to make it smooth and spreadable.
- Level the cake layers if necessary.
- Stack purple → blue → green → yellow → orange → red (or any order you like), putting a thin layer of buttercream between each.
- Cover the entire cake with a thin crumb coat. Chill for 20–30 minutes.
- Apply the final buttercream layer and smooth it.
- Decorate with sprinkles, piped buttercream, or little rainbow-colored candies.
Chef's trick 🌈
For the cleanest rainbow layers, weigh the batter and divide it equally rather than eyeballing it. And don't overbake—the layers should stay soft and moist because there are six of them.
For a more sophisticated version, I'd make it vanilla–cream cheese frosting with very thin, intensely colored layers rather than the huge American-style rainbow cakes.
