Fish with kiwi and peanuts
Fish + kiwi + peanuts can work beautifully: the kiwi brings acidity and sweetness, while peanuts add crunch and richness.
🐟 Pan-Seared Fish with Kiwi-Peanut Salsa

Ingredients
- 2 white fish fillets — sea bass, cod, haddock, or tilapia
- 2 kiwis, peeled and diced
- ⅓ cup roasted peanuts, roughly chopped
- 1 tbsp olive oil
- 1 tbsp lime or lemon juice
- 1 small garlic clove, finely grated
- ½ tsp honey
- ½ tsp grated ginger
- Salt & black pepper
- A little chili or cayenne, optional
- Fresh coriander or parsley
Method
- Make the salsa: Combine kiwi, peanuts, lemon/lime juice, honey, ginger, garlic, herbs, and a pinch of salt. Let it sit for about 5 minutes.
- Season the fish: Salt and pepper both sides.
- Sear: Heat olive oil in a skillet over medium-high heat. Cook the fish for about 3–4 minutes per side, depending on thickness, until just cooked through and lightly browned.
- Finish: Spoon the kiwi-peanut salsa over the hot fish.
- Add another squeeze of lemon and a tiny drizzle of olive oil.
Best combination: firm white fish + tart kiwi + roasted salted peanuts + ginger + lime + a little chili.
For something more substantial, serve it with crispy potatoes or a simple cucumber salad.
