Why the cake came out gooey?

 A cake usually comes out gooey in the middle because something affected the balance between heat, time, moisture, and ingredients. Common causes:

1. It wasn’t baked long enough

  • The outside sets first, but the center stays wet.
  • The oven may run cooler than the temperature shown.
  • A deep cake pan needs more time than a shallow one.

Fix: Bake longer and test the center with a toothpick or knife. It should come out with a few crumbs, not wet batter.

2. Oven temperature was too low

  • A low temperature lets the cake slowly heat without properly setting the structure.
  • Opening the oven door too often can also drop the temperature.

Fix: Preheat fully and use an oven thermometer if possible.

3. Too much liquid or fat

Examples:

  • Too much milk, oil, butter, yogurt, fruit purée, chocolate, or eggs.
  • Measuring cups can cause errors, especially with flour.

Fix: Weigh ingredients when possible.

4. Too much sugar

Sugar attracts moisture. A very sweet cake can stay soft and sticky.

5. Too little flour or too much flour substitution

Flour provides the structure that holds the cake together.

6. Wrong mixing technique

  • Overmixing after adding flour can make the cake dense and gummy.
  • Undermixing can leave pockets of wet ingredients.

7. The cake was cut too soon

A cake continues setting as it cools. Cutting it hot can make it look gooey even if it would have firmed up.

8. Ingredients were too cold

Very cold eggs, milk, or butter can prevent proper emulsification and baking.
