Watermelon, Feta, Cucumber & Mint Salad
Ingredients
- 2 cups watermelon, cubed
- 1 cucumber, sliced or diced
- ½ cup feta cheese, crumbled
- Small handful fresh mint, chopped
- 1–2 tbsp olive oil
- Optional: squeeze of lemon or lime
- Pinch of black pepper
- Optional: toasted sesame or pumpkin seeds for crunch
Instructions
- Add watermelon and cucumber to a bowl.
- Sprinkle feta and chopped mint over the top.
