Tawook recipe
Here’s a classic chicken Tawook (Shish Tawook) recipe—juicy, flavorful, and perfect for grilling or oven-baking 🍢🇱🇧.
Ingredients (4 servings)
For the chicken marinade:

500 g (1 lb) chicken breast or thighs, cut into cubes

3 tbsp plain yogurt

2 tbsp olive oil

2–3 garlic cloves, minced

1 tbsp tomato paste (optional, for color & flavor)

1 tbsp lemon juice

1 tsp paprika
-
1 tsp ground cumin
-
½ tsp ground coriander
-
½ tsp turmeric (optional)

½ tsp chili powder or cayenne (adjust to taste)

Salt & pepper to taste
Optional for serving:

Pita bread or flatbread

Garlic sauce (toum) or yogurt sauce

Pickles, lettuce, tomatoes
Method

Prepare marinade:
In a bowl, mix yogurt, olive oil, garlic, tomato paste, lemon juice, and spices. -
Marinate chicken:
Add chicken cubes, mix well, cover, and refrigerate at least 2–4 hours, ideally overnight for best flavor. -
Skewer the chicken:
Thread marinated chicken onto skewers. If using wooden skewers, soak them in water for 30 min to prevent burning. -
Cook the Tawook:
Grill method: Preheat grill to medium-high, cook 10–15 min, turning occasionally until chicken is fully cooked.
Oven method: Preheat oven to 200°C (400°F), place skewers on a baking tray, bake 20–25 min, turning halfway. -
Serve:
Serve hot with pita bread, garlic sauce, pickles, and salad.
