Tawook recipe

 

Here’s a classic chicken Tawook (Shish Tawook) recipe—juicy, flavorful, and perfect for grilling or oven-baking 🍢🇱🇧.


Ingredients (4 servings)

For the chicken marinade:

  • 500 g (1 lb) chicken breast or thighs, cut into cubes

  • 3 tbsp plain yogurt

  • 2 tbsp olive oil

  • 2–3 garlic cloves, minced

  • 1 tbsp tomato paste (optional, for color & flavor)

  • 1 tbsp lemon juice

  • 1 tsp paprika

  • 1 tsp ground cumin

  • ½ tsp ground coriander

  • ½ tsp turmeric (optional)

  • ½ tsp chili powder or cayenne (adjust to taste)

  • Salt & pepper to taste

Optional for serving:

  • Pita bread or flatbread

  • Garlic sauce (toum) or yogurt sauce

  • Pickles, lettuce, tomatoes


Method

  1. Prepare marinade:
    In a bowl, mix yogurt, olive oil, garlic, tomato paste, lemon juice, and spices.

  2. Marinate chicken:
    Add chicken cubes, mix well, cover, and refrigerate at least 2–4 hours, ideally overnight for best flavor.

  3. Skewer the chicken:
    Thread marinated chicken onto skewers. If using wooden skewers, soak them in water for 30 min to prevent burning.

  4. Cook the Tawook:
    Grill method: Preheat grill to medium-high, cook 10–15 min, turning occasionally until chicken is fully cooked.
    Oven method: Preheat oven to 200°C (400°F), place skewers on a baking tray, bake 20–25 min, turning halfway.

  5. Serve:
    Serve hot with pita bread, garlic sauce, pickles, and salad.


Tips

  • Use yogurt in the marinade to keep chicken tender.

  • Add a pinch of smoked paprika for extra depth.

  • For a slightly charred flavor like a grill, broil the last 2–3 minutes in the oven.

  • Can also cook on a stovetop pan or griddle.
