Garlic salad

 Here’s a simple guide to making a garlic salad—refreshing, flavorful, and perfect for plant-based eating 🥗🧄.


1. Simple Garlic Green Salad

Ingredients (2–3 servings):

  • 4 cups mixed greens (lettuce, arugula, spinach)

  • 1–2 cloves garlic, minced

  • 1 small cucumber, sliced

  • 10 cherry tomatoes, halved

  • 2 tbsp olive oil

  • 1 tbsp lemon juice or apple cider vinegar

  • Salt & black pepper to taste

Method:

  1. In a bowl, whisk garlic + olive oil + lemon juice + salt & pepper.

  2. Toss the greens, cucumber, and tomatoes with the dressing.

  3. Serve immediately.


2. Roasted Garlic Salad

Ingredients:

  • 1 head of garlic

  • 4 cups salad greens

  • 1 bell pepper, sliced

  • ½ red onion, thinly sliced

  • 2 tbsp olive oil

  • 1 tbsp balsamic vinegar

  • Salt & pepper

Method:

  1. Roast garlic at 200°C (400°F) for 20–25 min until soft.

  2. Squeeze roasted garlic out and mix with olive oil & balsamic vinegar.

  3. Toss with greens and veggies.


3. Garlic & Herb Chickpea Salad

Ingredients:

  • 1 cup cooked chickpeas

  • 2 cups mixed greens

  • 1–2 garlic cloves, minced

  • 1 tbsp olive oil

  • 1 tsp dried oregano or thyme

  • Juice of ½ lemon

  • Salt & pepper

Method:

  1. Mix garlic + olive oil + lemon + herbs.

  2. Toss with chickpeas and greens.

  3. Optional: add cherry tomatoes or cucumber.


Tips

  • Garlic can be raw for a sharp kick or roasted for sweetness.

  • Pair with nuts or seeds for extra crunch.

  • Add avocado for creaminess.
