1. Simple Garlic Green Salad
Ingredients (2–3 servings):

4 cups mixed greens (lettuce, arugula, spinach)

1–2 cloves garlic, minced

1 small cucumber, sliced

10 cherry tomatoes, halved

2 tbsp olive oil

1 tbsp lemon juice or apple cider vinegar

Salt & black pepper to taste
Method:

In a bowl, whisk garlic + olive oil + lemon juice + salt & pepper.

Toss the greens, cucumber, and tomatoes with the dressing.

2. Roasted Garlic Salad
Ingredients:

1 head of garlic

4 cups salad greens

1 bell pepper, sliced

½ red onion, thinly sliced

Method:
