For the cake:

Method

Preheat oven to 175°C (350°F). Grease and flour a 9-inch cake pan.

Mix dry ingredients: flour, baking powder, baking soda, salt. Dissolve coffee granules in yogurt/milk if using.

Cream butter & sugar until light and fluffy. Add eggs one at a time, then vanilla.

Alternate adding dry ingredients and yogurt/coffee mixture to the butter mixture. Fold in walnuts.

Pour batter into the prepared pan, smooth the top, and bake 35–40 min (toothpick should come out clean).

Cool cake 10 min in pan, then remove and cool completely.
Glazes
Chocolate: Melt chocolate with cream, pour over cooled cake, let set.
Coffee: Mix powdered sugar with dissolved coffee, drizzle over cake.
Caramel: Heat sugar + water until amber, remove from heat, stir in butter and cream, pour over cake.
