Ingredients

  • 1.2–1.5 kg (about 3 lb) chicken pieces (thighs and drumsticks recommended)

  • 2 tbsp vegetable oil or butter

  • 1 large onion, finely chopped

  • 2–3 cloves garlic, minced

  • 2–3 tbsp sweet Hungarian paprika

  • 1 bell pepper, sliced (optional)

  • 1 tomato finely chopped or 1–2 tbsp tomato paste (optional)

  • 1 cup (240 ml) chicken stock or water

  • Salt & black pepper to taste

  • ¾ cup sour cream

  • Fresh parsley (optional, for garnish)


Instructions

  1. Brown the chicken:
    Heat the oil/butter in a heavy pot over medium heat. Add chicken pieces and brown lightly on all sides; remove and set aside.

  2. Sauté onion & garlic:
    In the same pot, add the chopped onion and cook until soft and translucent. Add the garlic and cook 1 more minute.

  3. Add paprika:
    Sprinkle in the paprika (don’t let it burn) and stir to coat onions. Optionally add bell pepper and tomato or paste now.

  4. Simmer:
    Add the stock, return the browned chicken to the pot, bring to a boil, then lower the heat, cover, and simmer about 30–40 minutes until chicken is tender.

  5. Finish with sour cream:
    Remove a few tablespoons of hot liquid, stir into the sour cream to temper it, then mix it back into the pot. Heat gently (do not boil) until sauce thickens and is creamy.

  6. Serve:
    Garnish with parsley and serve over dumplings, noodles, rice, or mashed potatoes. Wikipedia
