Ingredients (serves 2)

200 g (7 oz) thinly sliced beef

100 g (3.5 oz) mushrooms, sliced

1 small onion, chopped

2 garlic cloves, minced
-
1 cup pre-cooked or quick-cook rice
-
2 tbsp soy sauce
-
1 tbsp water or beef broth
-
1 tbsp vegetable oil
-
Salt & pepper to taste

Optional: green onions for garnish
Instructions

Cook beef:

Heat oil in a large pan over high heat.

Stir-fry beef 2–3 minutes until just browned. Remove and set aside.

Cook veggies:

In the same pan, sauté onions 1 minute.

Add garlic and mushrooms, cook 2–3 minutes until soft.

Combine rice & beef:

Add pre-cooked rice to the pan, stir to mix.
