Mint salad

A mint salad is fresh, cooling, and perfect as a side or light main—especially in hot weather. Mint pairs beautifully with fruits, grains, or veggies depending on the style you want.

Here are two delicious versions: a light Lebanese-style mint salad and a fruit-based mint salad.

🥗 1. Lebanese-Style Mint Salad

🌿 Ingredients:

  • 1 bunch fresh mint leaves (stems removed)

  • 1 bunch parsley (optional, for balance)

  • 2 tomatoes, diced

  • 1 cucumber, chopped

  • 2–3 green onions or 1 small red onion, finely sliced

  • Juice of 1 lemon

  • 2 tbsp olive oil

  • Salt to taste

  • Optional: sumac, pomegranate seeds, or a pinch of chili flakes

🥣 Instructions:

  1. Wash and chop all vegetables and herbs.

  2. Combine in a bowl.

  3. Add lemon juice, olive oil, and salt. Toss gently.

  4. Serve chilled or at room temperature.

🍉 2. Minty Fruit Salad

🍓 Ingredients:

  • Watermelon or cantaloupe, cubed

  • Strawberries, halved

  • Blueberries or grapes

  • Fresh mint leaves, chopped or torn

  • Juice of 1 lime or lemon

  • 1 tsp honey or maple syrup (optional)

🥣 Instructions:

  1. Mix all fruits in a large bowl.

  2. Add lime juice, sweetener (if using), and mint.

  3. Toss and chill before serving.

🍽️ Tips:

  • For more protein, add feta, quinoa, or chickpeas.

  • Mint goes well with bulgur, tomatoes, and olive oil—great for tabbouleh-like salads.
