Gazpacho is a refreshing, cold Spanish soup made from raw vegetables—perfect for hot days! It's healthy, hydrating, and easy to make with no cooking required.
🍅 Classic Andalusian Gazpacho Recipe
🥒 Ingredients:

4–5 ripe tomatoes, chopped

1 small cucumber, peeled and chopped

1 small green bell pepper (or red), chopped

1 small red onion or 1 garlic clove

2–3 tbsp olive oil

2 tbsp red wine vinegar or sherry vinegar

1 slice of stale bread (optional, for thickening)

Salt and black pepper to taste

Cold water (as needed)

Optional: a few ice cubes to chill

Soak bread in water (if using), then squeeze out excess liquid.

In a blender or food processor, combine:

Olive oil, vinegar, salt, pepper

Blend until smooth. Add cold water to thin it to your liking.
