Gaspacho

Gazpacho is a refreshing, cold Spanish soup made from raw vegetables—perfect for hot days! It's healthy, hydrating, and easy to make with no cooking required.


🍅 Classic Andalusian Gazpacho Recipe

🥒 Ingredients:

  • 4–5 ripe tomatoes, chopped

  • 1 small cucumber, peeled and chopped

  • 1 small green bell pepper (or red), chopped

  • 1 small red onion or 1 garlic clove

  • 2–3 tbsp olive oil

  • 2 tbsp red wine vinegar or sherry vinegar

  • 1 slice of stale bread (optional, for thickening)

  • Salt and black pepper to taste

  • Cold water (as needed)

  • Optional: a few ice cubes to chill


🥣 Instructions:

  1. Soak bread in water (if using), then squeeze out excess liquid.

  2. In a blender or food processor, combine:

    • Tomatoes

    • Cucumber

    • Bell pepper

    • Onion or garlic

    • Bread (optional)

    • Olive oil, vinegar, salt, pepper

  3. Blend until smooth. Add cold water to thin it to your liking.

  4. Taste and adjust seasoning. Chill for at least 1 hour (or add ice cubes for instant cooling).

  5. Serve cold with toppings (optional).


🍽️ Optional Toppings:

  • Diced cucumber or tomato

  • Croutons

  • Chopped herbs (basil, parsley)

  • A drizzle of olive oil

  • Use very ripe, juicy tomatoes for best flavor.

  • You can strain it for a smooth texture or leave it chunky.

  • Keeps well in the fridge for 2–3 days.
