Feta Quinoa Salad

🥗 Feta Quinoa Salad Recipe

Ingredients:

  • 1 cup quinoa (uncooked)

  • 2 cups water or vegetable broth

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, diced

  • 1/2 red onion, finely chopped

  • 1/2 cup crumbled feta cheese

  • 1/4 cup fresh parsley or mint, chopped

  • 1/4 cup Kalamata olives, pitted and sliced (optional)

  • Juice of 1 lemon

  • 3 tbsp olive oil

  • Salt and pepper to taste


Instructions:

  1. Cook the quinoa:
    Rinse quinoa under cold water. Combine with water or broth in a pot, bring to a boil, then simmer covered for 15 minutes or until water is absorbed. Fluff with a fork and let cool.

  2. Prep the veggies:
    While quinoa cools, chop tomatoes, cucumber, onion, herbs, and olives.

  3. Mix the salad:
    In a large bowl, combine cooled quinoa, veggies, feta, and herbs.

  4. Dress the salad:
    In a small bowl, whisk lemon juice, olive oil, salt, and pepper. Pour over the salad and toss gently.

  5. Serve:
    Chill for 30 minutes to meld flavors or serve immediately.
