Feta Quinoa Salad

🥗 Feta Quinoa Salad Recipe
Ingredients:

1 cup quinoa (uncooked)

2 cups water or vegetable broth

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1/2 cup crumbled feta cheese

1/4 cup fresh parsley or mint, chopped

1/4 cup Kalamata olives, pitted and sliced (optional)

Juice of 1 lemon

3 tbsp olive oil

Salt and pepper to taste
Instructions:

Cook the quinoa:
Rinse quinoa under cold water. Combine with water or broth in a pot, bring to a boil, then simmer covered for 15 minutes or until water is absorbed. Fluff with a fork and let cool. -
Prep the veggies:
While quinoa cools, chop tomatoes, cucumber, onion, herbs, and olives. -
Mix the salad:
In a large bowl, combine cooled quinoa, veggies, feta, and herbs. -
