Mixed Berries Cake
Ingredients:

1 ¾ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

¾ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs
-
1 tsp vanilla extract
-
½ cup sour cream or Greek yogurt

1 ½ cups mixed fresh or frozen berries (blueberries, raspberries, strawberries, blackberries)

Powdered sugar (for dusting, optional)
Instructions:

Preheat oven:
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan. -
Mix dry ingredients:
In a bowl, whisk together flour, baking powder, baking soda, and salt. -
Cream butter and sugar:
In a large bowl, beat the softened butter and sugar until light and fluffy. -
Add eggs and vanilla:
Beat in eggs one at a time, then add vanilla extract. -
Combine wet and dry:
Alternately add the flour mixture and sour cream (or yogurt), beginning and ending with the flour mixture. Mix just until combined. -
Fold in berries:
Gently fold in the berries, being careful not to crush them. -
Bake:
Pour the batter into the prepared pan. Bake for about 40-45 minutes or until a toothpick inserted in the center comes out clean. -
Cool:
