 Here’s a lovely, moist Mixed Berries Cake recipe that’s simple to make and perfect for any occasion!


Mixed Berries Cake

Ingredients:

  • 1 ¾ cups all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • ¾ cup unsalted butter, softened

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • ½ cup sour cream or Greek yogurt

  • 1 ½ cups mixed fresh or frozen berries (blueberries, raspberries, strawberries, blackberries)

  • Powdered sugar (for dusting, optional)


Instructions:

  1. Preheat oven:
    Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  2. Mix dry ingredients:
    In a bowl, whisk together flour, baking powder, baking soda, and salt.

  3. Cream butter and sugar:
    In a large bowl, beat the softened butter and sugar until light and fluffy.

  4. Add eggs and vanilla:
    Beat in eggs one at a time, then add vanilla extract.

  5. Combine wet and dry:
    Alternately add the flour mixture and sour cream (or yogurt), beginning and ending with the flour mixture. Mix just until combined.

  6. Fold in berries:
    Gently fold in the berries, being careful not to crush them.

  7. Bake:
    Pour the batter into the prepared pan. Bake for about 40-45 minutes or until a toothpick inserted in the center comes out clean.

  8. Cool:
    Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  9. Serve:
    Dust with powdered sugar before serving if desired.
